Three (Holiday) Green Juice Recipes

Although the holiday season is the time most people fall off of their diet “wagons” and a great number of us (including me) tend to consume large amounts of refined carbs and sugars, I am making a concerted effort this year to maintain at least a few of my healthiest habits. While stacks of cakes and chocolates are piling up under the tree, I am doing my best to prepare as many green juices as I can before I completely lose all of my willpower and devour an entire pizza or drink a bottle of wine.

Below are three juice recipes that I have thrown together in the recent whirlwind of baking, planning, shopping and wrapping. Both were enjoyed by myself, my small daughter, the nanny and my hopelessly unhealthy husband (which, to me, is a great feat).

1. Dark Green Pre-Feast Juice

Ingredients (serves 2):

  • 1 pear
  • 5 leaves of kale
  • 1 cucumber
  • 1 zucchini
  • 1 handful Swiss chard
  • 2 stalks celery
  • 1 lime

Instructions:

Wash, peel, juice, serve and enjoy!

2. Sweet and Sassy Green Juice

  • 3 leaves of kale
  • 1 small handful fresh parsley
  • ¼ pineapple
  • 1 bulb fennel
  • 3 stalks celery
  • 1 1-inch piece of ginger

Instructions:

  • Wash, peel, juice, serve and enjoy!

3. “The Holidays are Coming” Green Juice

Ingredients (serves 2):

  • 1 apple
  • 2 handfuls baby spinach
  • 1 bulb fennel
  • 3 stalks celery
  • 1 cucumber
  • ½ lemon

Instructions:

Wash, peel, juice, serve and enjoy!
