Nutrient Packed Green Smoothie

One of my closest friends is pregnant. She lives on the other side of the world but luckily, with the miraculous workings of modern technology, we are able to speak regularly (or as often as our busy schedules permit). The other night, as she explained to me how terrible she feels (and as I assured her that I totally get it, and that its ok to complain), she gave me the recipe of a delicious green smoothie.

I decided to try it out, incorporating it into a smoothie bowl, and it was really freaking good. (Thanks, Amanda!)

Amanda’s Greeen Smoothie Recipe

  • 1 ½ frozen bananas
  • ½ cup unsweetened almond milk
  • 1 handful fresh mint leaves
  • 1 1-inch piece of ginger
  • 1 ½ handfuls spinach leaves
  • ½ apple (I used a red delicious)
  • seeds from 1 vanilla bean

  • Clean the fruit and veggies, blend and enjoy!

To make it a smoothie bowl:

  • Once the smoothie is made, transfer it to a bowl or two small bowls and decorate with the following superfoods:
    • Shelled hemp seeds
    • Bee pollen
    • Raw cocoa nibs
    • Apple slices
    • Sprig of mint

*Among the number of amazing nutrients in this smoothie/bowl, here are a few that stick out:

  • Anti-oxidants
  • Anti-inflammatory
  • Vitamin A
  • Calcium
  • Vitamin D
  • Vitamin B-12
  • Vitamin C
  • Omega 3

*And if you happen to be preggers like my friend, Ginger is great for soothing tummies and easing nausea (I should know…I drank ginger infusion everyday for nine months!!!)
