I love me some superfood….
Today I woke up with a massive desire for something creamy, tart and packed full of nutrients. What better than an acai, strawberry superfood smoothie with coconut milk?
Apart from slicing my finger open with the coconut milk aluminum can, the smoothie making experience went smoothly. 😉 It was exactly what I was looking for….and really pretty to boot. I made a huge bowl (should have served at least two people- but I ate the whole thing. I was full until dinner. Beware).
Acai Coconut Milk Superfood Smoothie Bowl
For the Smoothie:
- 2 frozen bananas
- 2 ½ cup frozen (fresh would work) strawberries
- 1/3 cup coconut milk
- 1 tsp maqui berry powder
- 1/ tsp acai berry powder
- 1 tsp chia seeds
- 1 tsp maca powder
- Blend (I used my Vitamix)
Anything can work here from fresh fruits, frozen fruits, dried flowers, seeds, grains, etc… but I used:
- Dried cornflower petals
- Raw cocoa nibs
- Whole Japanese mandarins (I have a tree on my terrace!)
