Cauliflower Puree

 

Today we have: garlic #cauliflower purée, roasted beets, roasted pumpkin and toasted pistachios.

Recipe:
This is one of my favorite side dishes.
Cauliflower purée is simple, delicious and a serious crowd pleaser. Serve it as a side to any yummy dish or as a base for serving other veggies (like I did here 👆🏻)
For garlic cauliflower mash you will need:
(Ingredients):
1 head cauliflower
3 Tbsp olive oil
2 garlic cloves (minced)
1/4 cup full fat coconut milk
Large pinch Himalayan salt
Cracked black pepper

Instructions:
Cut cauliflower into small florets and steam in until tender - about 15-20 minutes depending on size of pot and cauliflower florets. Cool.
In a separate pan, heat the olive oil and sauté the garlic over low heat until just slightly browned and fragrant.
Transfer half of the cauliflower to a food processor (or use an immersion blender to purée cauliflower) until fully puréed. Add the sautéed garlic and continue to purée until well combined.
Transfer to a large bowl and stir in the coconut milk for creaminess (if you don’t like the rich taste of coconut- you can use almond or rice milk but I love the texture the coconut gives). Adjust salt and pepper and serve.
