Recipe development inspiration! Of course..
This week I made a massaged kale salad (massaged with lemon juice and olive oil) served with grated organic carrots, juicy tart kiwi slices and miso/orange roasted almonds... (sweetly sour perfection if you ask me...)

For the dressing:
I reduced the juice of two oranges (Place juice in a small saucepan over medium-high heat. Gently boil until liquid has reduced to 1/2 cup and is syrupy, about 1 hour) and then blended with about 1/2 tsp mustard, 1 tsp balsamic vinegar, 2 Tbsp olive oil and a pinch of salt.
The result? BEYOND.

P.S. The point of massaging the kale to infuse it with the lemon and oil in order to break down some of the tough, fibrous characteristics of the leaves, making them easier to chew and digest. To massage: rip the leafy part of the kale off of the rib (discard the ribs), place the leaves in a large bowl, pour a bit of olive oil and squeeze some fresh lemon juice, adding a pinch of salt. Gently knead the leaves for about 3-5 minutes until all surfaces of the leaves are covered and tender.
