Vegan Alfredo Sauce
Versatile, yummy and completely PLANT BASED! Here is my best/favorite vegan Alfredo sauce recipe (and trust me, I have a few... this one is cashew based but I’ve also done it with cauliflower, potatoes and nut milks).
The last time I served this sauce was with zucchini noodles (zoodles) and sautéed mushrooms. buuut- it’s great over veggies or with traditional pasta.
Store in the fridge.

Ingredients:
-1 cup raw cashews, soaked overnight, drained and rinsed
-3/4 cup water
-2 medium garlic cloves
-1/2 tbsp lemon juice
-1 small yellow onion, diced
-3 tbsp nutritional yeast
-1 large pinch Himalayan salt
-1/4 tsp cracked black pepper
Instructions:
Once the cashews have soaked and are rinsed clean, add all the ingredients to a high speed blender (I used my Vitamix) and blend until completely smooth. Serve as desired.
