Sunday Salad 😉

There’s something about a salad in summer. The heat. The long days. The sea. The sun.
Who knows. 🤗

What i do know is that I generally eat a salad a day during the summer months. And the best thing about salads? The innumerable possibilities… I mean: fruits, veggies, seeds, nuts, flowers, legumes…. dressings of all flavors, consistencies, and colors….
I also personally like mixing warm cooked veggies with raw lettuces…

And that’s exactly what I did in today’s yummy AF salad.
(I know the picture isn’t great- I threw this together and ate it quickly, snapping a photo in between….but you get the point!)

Raw ingredients:

Rocket lettuce and fennel

cooked ingredients:

sauteed artichoke hearts, tomatoes and tempeh.

Dressing: I think this is the best part- I normally put these ingredients into a jar and shake it up before pouring onto the salad. I also always make extra to have around for dipping sauce or more dressing.

Ingredients: shoyu, tahini, apple cider vinegar, olive oil.

Then…mix all this goodness together and enjoy! 🥗
