Baked Chocolate Doughuts with Hibiscus Cream “Cheese” Frosting

I can’t with the yumminess. 🍩 ⭐️❤️

I was going to save these photos for a later post but I don’t want to forget the recipe (as I tend to do sometimes) because it really was THAT good- so here’s some sweetness for you!

This was supposed to be a chocolate cake with “cream cheese” frosting and cookie crumbles but halfway through- my little girl brought me the doughnut pan and threw a curve ball into the plan.

All good. We adapt.

So these are chocolate doughnuts with hibiscus flavored cream cheese glaze and various toppings.

I was missing a bunch of ingredients for my usual chocolate batter and came up with this. I have to say: WOW! So good! I even surprised myself! 😂🙈

The ingredients for the chocolate cake/doughnuts is:

1 cup white rice flour

1 cup coconut sugar

3/4 cup soy milk (I’m sure other plant based milks work)

2 tsp Apple cider vinegar

1/8 cup coconut oil

1/8 cup olive oil

1/2 cup cocoa powder

1 tsp baking soda

6 tbsp acquafaba mixed with 2 tbsp ground flax seeds (I know! New combo! Totally works!)

1 or 2 pinches of salt

Instructions:

Mix the acquafaba with the ground flax and let sit for 5 mins

Stir the apple cider vinegar into the soy milk and whisk. Set aside to curdle for 5 mins.

Mix all the dry ingredients in a bowl and then add in the oils, milk mixture and flax mixture.

Grease a pan/doughnut molds and bake at 160C/325F for 20-25 minutes for #doughnuts or 30-40

Minutes for cake.

Let cool completely

For the frosting, I initially whisked together vegan butter, vegan cream cheese and maple syrup. (This was when I was making a cake and frosting it). To thin it out and turn it into a glaze, I just added more maple and a little soy milk. My daughter decided it had to be pink so we added some dried organic hibiscus powder.

Dip the doughnuts in the glaze and set in fridge.

Additional toppings:

Chocolate sauce made from raw cacao powder, cocoa butter and maple syrup. Also sprinkled some dried blackberry powder and cocoa nibs.

I hope you try out this recipe. It’s pretty unbelievable.
