Coconut Lime Brown Rice Bowls
Brown rice bowls. Couldn't decide on whether I wanted Thai or Mexican flavors, so I did a bit of both!
This is coconut lime brown rice (and a touch of ginger) with black beans and avocado. Filling, healthy, and totally yummy!
It’s a fully vegan and gluten free lunch for the family on a Tuesday afternoon by the beach 🏖
Ingredients:
Two cups short grain #brownrice
1 can coconut milk
3 cups vegetable broth
2 1-inch pieces of #ginger
Juice and zest from two small limes
5 shallots
1 Tropea (purple) onion
1 can #blackbeans
1 hass #avocado
Pinch of Himalayan salt (to taste)
Dried chili peppers (for garnish and if you want a little kick 👊🏻🌶🌶)
Instructions:
Sauté the onion, shallots and ginger in a bit of oil (coconut or olive works best)
Once the onions are translucent, add the rice (after rinsing it). Stir for about 5 minutes or until the rice is toasted and add the coconut milk, a chili pepper if desired and the broth. Stir and reduce heat. Let simmer for 15-20 minutes or until all the liquid is absorbed. Turn off eat and stir in the lime zest and juice, black beans and avocado chunks. Add salt as needed. Garnish as desired, serve and enjoy! 🏖🙏🏻❤️
