Chocolate cake with Chocolate Glaze
“Chocolate flavored chocolate cake with chocolate frosting” is basically what my daughter asks me for everytime I bake.
So that’s what she gets. Chocolate cake with chocolate frosting. 🍫 🍰
I pretty much use the same one bowl recipe always with a few variations depending on what I have available in the pantry.
This one was made with:
Cake ingredients:
2 flax eggs (2 tbsp ground flax seeds + 5 tbsp warm water)
1/2 cup soy milk (or almond milk) with 1 tsp apple cider vinegar
1.5 tsp baking soda
1/3 cup maple syrup
1/2 cup coconut sugar (or ground panela)
1/4 cup melted coconut oil
Pinch Himalayan salt
Seeds scraped from 1 vanilla bean
1 cup unsweetened apple sauce
1/2 cup cocoa powder (unsweetened)
1/2 cup almond meal
1/4 cup gf oat flour
3/4 cup gluten free flour blend (I make my own)
Instructions:
Preheat oven to 180C (350F) and prepare cake pan/mold either with vegan butter or coconut oil.
Make the flax eggs and mix the milk with the apple cider vinegar. Let sit for 5 mins. Add the baking soda to the milk mixture. Mix the flax eggs into the milk mixture and add the maple syrup and coconut sugar. Beat to combine. Add in the applesauce, coconut oil, vanilla and salt and mix well. Stir in the rest of the ingredients. If the batter is too dry add a little more #plantbased milk. Pour into prepared pan and bake for around 40 minutes or until a toothpick comes out clean. Let cool completely until you take the cake out of the pan.
For the icing, I used my favorite @thevegan8 chocolate ganache recipe (found on her website!) And that’s it! Not hard and incredibly delicious! If it weren’t so easy to make and so #yummy to eat, I would definitely eat #chocolatecake less often.
