Pancakes 🥞

Today’s breakfast was #vegan buttermilk pancakes.
Recipe by me, designed my my daughter. Can you tell!? (Those mini ones were totally her idea- as well as the intense plating.

Vegan buttermilk pancake ingredients:
2 cups gluten free baking flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp Himalayan salt
1,5 cups dairy free milk (I used a mix of coconut and rice)
2 tbsp apple cider vinegar
1/4 cup dairy free/vegan butter melted plus more for grilling
Instructions:
Sift and whisk together the gluten free flour, baking soda, baking powder, and salt. In a separate bowl, whisk together the dairy free milk and apple cider vinegar and let sit for 5 minutes until the milk curdles. Add in the melted butter. Mix the liquid ingredients into the dry ingredients and let sit for another 5 mins
Heat a pan or griddle and pour the batter by 1/3 cupfuls onto the griddle and cook on each side until golden.
Serve with maple syrup and fresh fruit.
*I do not add sugar to the batter as a personal choice but you can add 1-2 tbsp of sugar of choice to sweeten the pancakes.
